A bar-restaurant in Toulouse · 30 service nights, Fri 18 Sept to Sat 17 Oct 2026
This venue prints a kitchen or bar ticket only once an order is paid. Guests who pay from their table skip the walk and the queue, so their ticket prints almost at once. Online payment launched on 24 September and guests took to it fast: on the last weekend, 16–17 October, 42% of orders were paid from the table.
Paying online
From the first Friday after launch to the last, the share of orders paid online went from 14% to 41%; on Saturdays, from 27% to 42%. On the last weekend, online payments brought in 41% of revenue.
Shaded columns are Fridays and Saturdays. Numbered markers are product changes, listed below.
‘Card at the counter’ includes 82 bills split between card and cash.
Share of takings by payment method
Online payment is replacing card payments at the counter. Cash has not shrunk: 20% of takings before launch, 32% since. The guests still queueing at the counter are increasingly the ones paying cash.
Since launch, orders paid online average €19.42 for 1.8 items, against €22.39 for 2.0 items at the counter. Guests pay online for the small rounds: another drink, a fresh chicha. Those are the orders nobody wants to queue for.
Order to kitchen
In this venue, tickets print the moment an order is fully paid. For an order paid at the counter, the time from ordering to the kitchen ticket is the time the guest takes to walk up, queue and pay. We measured it on every paid order; payment and ticket are logged within the same second.
How to read it: one minute after ordering, what share of orders already has its ticket printed?
Counter wait, by the number of orders placed in the previous 15 minutes
Orders paid at the counter only. Shaded columns are Fridays and Saturdays.
Saturday 3 October was the busiest of the 30 nights: 336 paid orders. Even with 47% of them paid online, the median counter wait reached 10 min. On peak nights the counter is the bottleneck, and every guest who pays online takes pressure off it.
Once a ticket is sent to print, Ominin’s printer box prints it in 3.4 s (median), and 99.6% of tickets print within a minute. The 34 guests who started paying online and then paid at the counter waited longest of all: a median of 5 min 52 s.
Payment success
An attempt starts when a guest chooses to pay online. In the first week, 51% of attempts ended in a payment. On 29 September an update added 3-D Secure bank authentication, which many European cards require. From 30 September to 3 October, 92% of attempts succeeded. Attempts are counted up to 3 October only: since then, an abandoned attempt is cleared automatically and no longer recorded.
Lines show the average before and after the 29 September update.
What happened to each attempt, 24 Sept to 3 Oct
Including the first night (23 Sept), 163 attempts were abandoned, on orders totalling €3,112. 77% were followed by a new order at the same table within 30 minutes, typically 1 min 48 s later: the guest gave up on paying by card and ordered again. The other 38 (€682) were never followed by another order. That is the most the failed payments could have cost, and the bulk of it came before the update.
Rhythm
Fridays and Saturdays account for 68% of revenue. An average Saturday brings in €6,263; an average Wednesday, €874. The busiest quarter-hour of the period: 31 orders between midnight and 12:15am on Saturday 17 October.
By night of the week. Hours after midnight count towards the previous evening.
Paid orders only. 4 or 5 nights observed for each day of the week.
Tables & guests
A table that orders once usually orders again: 67% of tables place two or more orders in a night. The average table places 3 orders, spends €60.33 and keeps ordering for 82 minutes (median, tables with two or more orders). Every new round is a chance to pay from the table.
1,222 table-nights across 93 of the venue’s 100 tables
6,377 menu visits. Orders come in 2 min 58 s after the scan (median).
